Welcome to Day 2 of the Eat at Home Challenge — a one-week challenge designed to encourage and inspire you to make more meals at home in order to save money and eat more healthfully! I'm following the Eat at Home Slow Cooker Menu Plan and just love it so much!

You know how I said that I was going to do the Eat at Home Challenge this week? Well, I am doing it — you can watch my live videos on what I made for dinner the past two days here and here.

But, we’re actually not eating at home tonight.

I know, I sort of feel like a fraud!

You see, we’re going camping with our Community Group and we’re all bringing food for a cookout for dinner at the campsite (I’m bringing beef hot dogs and brats for everyone — because I got them marked down or on great sales over the past two months and had them in my freezer!).

I guess you could say that we are eating food from home at another location. So does that sort of count for the Eat at Home Challenge?

Even though we’re not eating at home tonight, I went ahead and made a slow cooker meal this morning so that we would have it on hand when we got home on Sunday from running the Tough Mudder.

(Yes, you read that right. We are camping on Friday and Saturday with our Community Group and then we’re running the Tough Mudder with two other couples on Sunday. Because hey, you only live once, right? Also, we got our Tough Mudder tickets through a Groupon deal and we roped some of our best friends into running it with us. So we couldn’t resist!)

What I Made Today

This morning, I made Slow Cooker Black Bean & Salsa Chicken with Cornbread Dressing. I improvised a bit in order to use what I already had on hand. Because, of course! 🙂

I’m going to take the liquid out and refrigerate all of it and then heat it up and make the cornbread dressing on Sunday when we get home from the Tough Mudder. It looks yummy!
