What I Cooked This Week & Our Thoughts On the Recipes (Eat at Home Challenge — Day 5)

This week I’ve been doing an Eat at Home Challenge here. This has been a one-week challenge designed to encourage and inspire you to make more meals at home in order to save money and eat more healthfully! I followed the Eat at Home Slow Cooker Menu Plan for it and just love it so much!

In case you missed some of the posts, I wanted to give you a run down of all the recipes I made this week and what we thought of each of them:

Day #1: Easy Shredded Taco Beef

I rarely ever buy roast, so this is going to be a big treat. And it was so simple to make — just 3 ingredients!

The verdict: We liked this, but we would prefer it on sandwiches or eaten plain. It was very flavorful and tender, but it just didn’t feel right to serve it on tacos. I guess we just prefer ground beef for tacos! 🙂

Day #2: Chicken & Broccoli “Stir Fry” in the Slow Cooker

This recipe was another crazy easy recipe and I wasn’t sure what my family would think of it. I made some Brown Rice in the Instant Pot to go along with it.

The verdict: This recipe was one of the biggest hits of the week! Only my picky child wasn’t too fond of it. But the rest of the family really liked it.

Day #3: Hawaiian BBQ Chicken Sandwiches in my Slow Cooker

The recipe for Hawaiian BBQ Chicken Sandwiches was another incredibly simple recipe! Only 2 ingredients + the fixings when you serve it!

The verdict: Very yummy! Everyone enjoyed these!

Day #4: Beef & Bean Topped Potatoes in the Slow Cooker

This recipe was a little more complicated and took about 30 minutes to make — including the time it took to brown the meat and brown the onions and bacon. Yes, I said BACON! Which basically means that you know this recipe was going to be good! 🙂

The verdict: Very yummy! This would also be good on noodles or just eaten plain! 🙂

Day #5: Herb Roasted Chicken in the Slow Cooker

This recipe was so simple to make and I think is going to taste amazing! We’re looking forward to having it for dinner tonight!
