Can the potatoes you made last night make a great breakfast too? You bet your bottom dollar they can! Whether roasted, boiled, or mashed, potatoes are the perfect ingredient to incorporate into a delicious morning meal that is healthy and super affordable too.
Potatoes are an excellent source of nutrition and have the complex carbohydrates necessary to keep you full and focused for at least a few hours.
Start your morning off right by enjoying one of these mouth-watering recipes!
Mashed Potato Pancakes
These are just like potato latkes, only in a slightly different form — and they are delicious.
Ingredients:
- 2 to 3 cups leftover mashed potatoes
- 2 eggs (I used 1 egg per 1 – 1.5 c. of mashed potatoes)
- Salt and pepper
- Butter or your oil of choice
- Sour cream, chives, chopped garlic (optional toppings)
Directions:
In a medium bowl, mix mashed potatoes, eggs, salt and pepper together.
Melt butter or heat oil in a frying pan over medium heat.
Shape small portions of the potato mixture in your hands until they resemble a flat burger patty.
Place potato patties into the pan and flip after three-four minutes, or when golden brown.
Serve with sour cream or your favorite garnish/condiment.
Cheesy Fiesta Potato Bake
Whether roasted or boiled, quartered potatoes can be incorporated into a delicious breakfast dish you’ll love. It’s great with hot sauce or Sriracha on top!
Ingredients:
- Bell peppers, sliced
- Onions, sliced
- Garlic cloves
- Olive oil
- Salt and pepper
- Thyme, Rosemary (optional)
- Shredded cheddar or your favorite cheese
- Leftover quartered potatoes
Directions:
Preheat over to 375ºF.
Place sliced peppers, onions, and garlic cloves in a roasting pan. Drizzle with olive oil and season with salt, pepper, and herbs.
Cover pan with foil, and cook in preheated oven for 20 minutes.
After 20 minutes, add in cooked potatoes, sprinkling with a little extra salt and pepper and your very favorite type of cheese.
Re-cover with foil and cook for an additional 5 minutes (or until cheese is melted and potatoes are warm).
Loaded Baked Potato Omelet
This is another great breakfast dish that is super easy to make! It serves one person, so repeat as needed for more people.
Feel free to add whatever ingredients you like to this dish — and top with cheese, sour cream, or any other favorite toppings
Ingredients:
- 3 eggs
- Dash of cream or milk
- Salt and pepper
- 2 strips of bacon
- Leftover potatoes; cubed or diced
- Onion; diced
- Bell pepper; diced
- Garlic; minced
- Cheese
- Sour cream (optional)
Directions:
In a small bowl, mix eggs, milk/cream, and salt and pepper. Set aside.
Heat a small frying pan on high. Turn down to medium-high and cook bacon until done. Crumble and set aside.
Sauté diced potatoes, onions, pepper, and minced garlic in bacon grease until tender.
Add bacon and egg mixture to the sautéd veggies and let cook until egg starts to set up.
Fold sides of omelet over to center and gently flip once the bottom of the omelet is cooked.
