I also bought 3 huge pumpkins at Aldi for $1.89 each. I will roast these, scoop out the filling, and blend it in my vitamix before freezing in quart-size bags. Even thought these aren’t “pie” pumpkins, they work just as well in pumpkin recipes (sometimes I need to adjust the liquid, increase the spices, or bake it longer, but I’ve never had a flop).
