Meal Prep Monday: Dinners for this Week (and our menu plan!)

You all loved the Meal Prep Monday post I did last week and asked for more, so I’m going to try to regularly share these as I’m able!

This weekend, I meal-prepped things for our dinners (plus a few extra fun things!). It feels SO good to have dinners mostly done for the week!

What I Meal Prepped

Taco Meat (2 pounds browned ground beef with one packet taco seasoning — I set aside a serving of the browned ground beef without taco seasoning for Silas to use for a lunch this week. He loves to make recipes with ground beef and potatoes or ground beef and rice. I also set aside some for the spaghetti casserole.)

Spaghetti Casserole (Spaghetti Noodles layered with jarred sauce and browned ground beef and cottage cheese mixed with egg and mozzarella cheese. Sprinkle with more mozzarella and bake at 350 degrees for 30 minutes or until bubbly.)

Ham & Beans (I had a mix of canned beans and some ham in the freezer — all that I’d gotten on sale over the past 5 months or so. I dumped the beans into a pot, chopped the ham up into it, added some water, and boiled it for about 10 minutes and then turned the heat down and let it simmer for 30 minutes.)

Homemade Crackers (These turned out SO well — recipe coming later this week!)

Cinnamon Roll Muffins (If you love the taste of cinnamon rolls but the ease of muffins, these are a great option! I’ll share the recipe soon, too!)

Healthy Peanut Butter Protein Balls (These were so healthy — PB powder, applesauce, and protein powder — that I was surprised they tasted as yummy as they did!! I’ll share the recipe soon, too!)

Menu Plan This Week

Sunday — Scrambled Eggs, Chicken Sausage, Fresh Apple/Carrot/Orange/Beet Juice

Monday — Ham & Beans (already made), Honey Cornbread, and Apple Slices

Tuesday — Spaghetti Casserole (already made), Homemade Rolls, Steamed Veggies

Wednesday — Dinner out for Kathrynne’s 20th birthday

Thursday — Just Bare Chicken Nuggets, Homemade Bread, Tater Tots, Steamed Veggies, Applesauce

Friday — Taco Bowls (taco meat, rice, beans, lettuce, tomatoes, cheese, and homemade tortillas)

Saturday — Leftovers or Frozen Pizza
